Sinirlerini aldın. Biraz da kuyruk yağı girdin, koyun kuyruk yağını girdin. Zeytin yağını da döktün… En büyük özelliğini söylüyorum: kimyon. Zeytinyağıyla kimyonla avcarla beklettin, iki saat maksimum dolaba koydun. Streçledin üstünü, dolaba koydun.

Baba, oldu lokum! Ondan sonra çıkar… bir tane kuyruk yağ, bir tane tavşan eti! Bir tane ondan bir tane on- yani var ya! Lokum! On numara olur!

English Translation

Barbecuing is our thing. Let me give you an example. [Let’s say] I shot a rabbit. Normally, rabbit meat is tough. When it’s boiled, it smells awful. It’s a useless meat! But, [let’s say] you chop up the rabbit. You chop it up into small pieces. You remove the tendons. You add a bit of tail fat, sheep tail fat. You pour olive oil… [now] I’m telling you the most important ingredient: cumin. You marinate it with olive oil, cumin, and spices, and put it in the fridge for a maximum of two hours. You cover it with plastic wrap, and put it in the fridge.

Man, it becomes [as soft as] Turkish delight! Then take it out… one piece of tail fat, one piece of rabbit meat! One of this, one of that- I mean, really! Turkish delight! It’s the best!
